Coconut Curry

I might not have a lot of free time at the moment, but there is still time for some cooking! So I tried my first curry one evening.

200g of boneless skinless chicken breast
200ml coconut milk
coconut oil
1 red bell pepper
1 red onion
1 clove of garlic
1 handful of sugar-snap peas
3-4 tsps of red curry paste
2 tsps of curry power

First cut the chicken breast in pieces and put them with the minced garlic, the red curry paste, the curry power and some coconut milk to create a paste that covers the chicken - set the mixture aside
Cut the vegetables. In a non-stick pan on high heat melt the coconut oil and then fry the chicken. Then add the vegetables and fry quickly.
Poor in the coconut milk and let it thicken up.
Season if needed with salt.
Serve with a portion of jasmine rice.
