Moving & Happy New Year

So I was very unsatisfied with blogging ever since I got my MacBook. Simply because my pictures were of really bad quality and the blog layout itself was not really me. After thinking about my options for a long time I came to the conclusion that there is no one-best-way. Both blogging platforms - Blogger and Wordpress - do have advantages as well as disadvantages. In the end Wordpress won, because it gives me the chance to upload my photographs in good quality and because I like the layout more (even though I might think about changing the color from pink into something else), but for now I am really happy!

I hope that I will see you all over there, on the new "Two Cups of Wanderlust" :)

Busy Pre-Christmas Times

December was just crazy so far - and yes, I still have one exam coming up on the 22nd!! Isn't that great? (insert sarcasm here).

Anyway, even if I spent more time studying and writing papers I also did some christmassy things to get in the spirit. Here is what I did in the past couple of weeks when I haven't been at university or studying in the library:

Best Season of the Year

Today the best season of the year officially started - 1st of December. That means Christmas is coming up soon. I love December - the exciting anticipation, the festive feeling, Christmas songs on the radio, evenings of tea or mulled wine, gingerbread, and if we are lucky even snow.

I put together a little Christmas list and try to keep up with it and share some of the points listed with you.

What are your Pre-Christmas traditions? Is there anything you always do before Christmas Eve?

3.     Buy a funny headband (I was thinking of reindeer antlers)

8,501.08 km

On Friday last week I got an email with really exciting news. It said that I'm nominated for an exchange semester in Victoria, Canada. After one month of interviews and countless hours of panicking and hoping the good news finally reached me!!
So in about 7 months I'll be moving again, 8,501.08 km across the Atlantic Ocean to a small city in British Columbia called Victoria. I cannot wait until this adventure starts. What courses do I want to take? Do I need a new passport? Where do I have to apply for student housing? There are a thousand questions in my head, but what is more, I am genuinely happy! I cannot put in words how much I'm looking forward to this time.

Days are getting shorter. Nights are getting longer. Time for snuggling up in your favorite pyjamas and grab a good book or magazine and roll up on the sofa. Or catching up with all a tv-show over a cup of tea. Or simply enjoying lazy weekends with your loved one.

Coconut Curry

I might not have a lot of free time at the moment, but there is still time for some cooking! So I tried my first curry one evening.

200g of boneless skinless chicken breast
200ml coconut milk
coconut oil
1 red bell pepper
1 red onion
1 clove of garlic
1 handful of sugar-snap peas
3-4 tsps of red curry paste
2 tsps of curry power

First cut the chicken breast in pieces and put them with the minced garlic, the red curry paste, the curry power and some coconut milk to create a paste that covers the chicken - set the mixture aside
Cut the vegetables. In a non-stick pan on high heat melt the coconut oil and then fry the chicken. Then add the vegetables and fry quickly.
Poor in the coconut milk and let it thicken up.
Season if needed with salt.
Serve with a portion of jasmine rice.

So I finally made a decision and purchased my MacBook a couple of weeks ago. I LOVE IT!!! Sure, I had to get used to many things and there are still some things that I have to figure out, but I do have some really helpful friends and, of course, Google.
Also, last week, while studying at the library, I ordered a skyline-sticker for the MacBook front. This was something I was really looking forward to. My best friend Madi once saw a girl at Northwestern University having that sticker on her MacBook and we loved it. A couple of days later, she purchased it! My bestie, Swedish Maddie, did the same thing. So the only one missing out was me - neither had the sticker nor a MacBook... But the waiting is over and now I can finally say that I'm part of the Chicago-Sticker-Gang, too.

Pumpkin Spice Cake

I've been getting really excited for fall recently. If you have asked me a couple of weeks ago, I would have been sobbing and whining, you gotta know, I'm such a summer person! Anyway, now my excitement for the cooler seasons is finally arising. I love the smell that is in the air now, you can actually smell autumn. Then Christmas is in less then 100 days (EXCITEMENT going on here!!!). Scarf and Boots season started (well, as you might have heard, Austria turned into a "all-year-round-boots-and-warm-clothes-appropriate-country", this is not really new...). Nature is getting more and more colourful with every passing day. We are enjoying the last warm sun rays. And last but not least: pumpkin season started!!

This is also the reason why I would like to share a really simple but delicious recipe for a "pumpkin spice cake" with you.
I looked up different recipes on the Internet and ended up making up my own version. Turn up some music and let the fun begin!!

I am so obsessed with those songs at the moment:

120 g of melted butter
100 ml maple syrup
3 eggs (separated)
200 g pureed pumpkin
2 tbsps sour cream
200 g flour
1 tsp baking soda
1 tsp baking powder
2 tsps pumpkin spice (or gingerbread spice)
dash of cinnamon
dash of salt

Get your bowls, ingredients, etc. and heat up the oven to 350°F/ 180°C
Beat the egg whites with the salt. Set aside.
Mix together the melted butter and the maple syrup until it is nicely combined. Then add the yolks. Beat again. Then add the pumpkin and the sour cream.
Combine all dry ingredients and gradually add to the pumpkin mixture.
Carefully fold the egg whites under the batter.
Grease a bundt cake pan and sprinkle with flour. Then add the batter and bake for approximately 45 minutes until the top has a nice golden color.

If you feel like it, you can always cover your cake with a glaze or some frosting. I just made a chocolate glaze, but cheesecake frosting would also work very well.

Chia-Chocolate Breakfast

The obsession with chia seeds is already going on for some time. Super healthy, no flavour so you can used them for sweet and savoury dishes, easy to use, etc. Some months ago I tried a chia pudding for the first time. Then I was not that convinced - I didn't like the consistency a lot neither did I like the fact that it doesn't really taste like anything.

But two days ago I gave chia seeds another shot and this time I tried chia-chocolate pudding. So simply and delicious, and the best part - you can prepare it in advance and just grab it in the morning if you are in a hurry.

3 tbls chia seeds
2 tbls coconut flakes
1 tbl cocoa powder
dash of cinnamon
liquids (I used soy milk and water, you can also use normal milk, yogurt, juice, etc.)

Mix all the ingredients together and fill the jar up with the liquids. Then shake REALLY well and let it sit overnight and enjoy with fruits, nuts, fruit compote, fruit puree, etc. the next morning for breakfast.

People Watching

I get caught a lot!! While observing people, I make up stories about them or wonder what they are like. Is your name Christopher or are you a Jonas? You sure could also be from another country and everyone calls you Soraya or Layena. Are you on the way home to your family? If so, why are you looking so sad? I like your bag, I think next, but I’m not brave enough to actually yell that across the underground. Sometimes I smile, simply because I like the way you look at someone else. And then I get caught starring at them. Super awkward. SORRY!! Didn’t mean to make you feel uncomfortable, I just love “People Watching”.

Anyway – London is a great place for observing people and making up stories!
